The crostini with White Truffle is one of the most typical recipes of Acqualagna. During the National Fair of the White Truffle, this dish becomes, together with Tagliatelle with Truffle, the main culinary protagonists of the scene. The crostini are easy and quick to prepare.
50 gr. white truffle
30 gr. parmisan cheese
1 cup of beef stock
50 gr. of butter
lemon juice, salt, slices of toasted bread
Add the melted butter, the truffle and lemon juice to the stock, and cook for a few minutes over moderate heat. With the heat turned off add the grated parmisan cheese and pour the entire mixture onto toasted bread. Sprinkle with slivers of white truffle.
